Ingesting the vibrant new growth of spring gives life and energy, so I bring you one of my favorite spring recipes! This spring pizza incorporates all of the fresh, green flavors of this fleeting season. Spring onions, asparagus, peas, fresh eggs and pea shoots are abundant in spring and complement each other on this pizza. Nourishing pea shoots can be grown at home, found in farmers’ markets and in some stores. Pea shoots and asparagus provide fiber, folate and vitamins A, C, and K. These plant foods are rich in antioxidants with anti-inflammatory properties. Eggs and peas provide protein, making each slice satisfying.
I love the creamy texture of eggs on pizza, but if it’s not your thing you can leave them off, substituting prosciutto or pine nuts. Our hens start laying like crazy in spring, so I’m putting eggs on everything! And if you’re wondering “are eggs good for me?” check out this post.
