Spring Pizza with Fresh Eggs and Asparagus
This spring pizza recipe incorporates all of the fresh, green flavors of spring–green onions, asparagus, peas, fresh eggs and pea shoots are abundant in spring and complement each other on this pizza!

  1. Preheat the oven to 475 degrees.
  2. In a large pan, warm the olive oil over medium-low heat. Add the onion and garlic. Cook until they begin to caramelize, stirring periodically.
  3. Boil a small pot of water. Blanch the asparagus and peas for one minute, then transfer to an ice bath. Drain and set aside.
  4. Generously grease a pizza pan with olive oil. Place room-temperature dough in the pan and spread it from the center to the edges using a pressing motion.
  5. Spread the olive oil with caramelized onions and garlic onto the dough.
  6. Sprinkle the cheese evenly over the pizza.
  7. Spread the asparagus and peas over the cheese.
  8. Bake for 5 minutes, then remove the pizza from the oven. Reduce the oven temperature to 375 degrees.
  9. Using a large spoon, press three evenly spaced depressions in the pizza for the eggs. Crack one egg into each depression. Return the pizza to the oven and bake 10-12 minutes, until eggs are set.
  10. Remove the pizza from the oven and sprinkle with pea shoots. Cut into 8 slices, serve and enjoy!
